Chef/Kitchen Director - Summer 2023
Work Location: Grant Walker 4-H Educational Center – Pollock, LA.
Description: The Grant Walker 4-H Educational Center seeks a Kitchen Director to manage our kitchen and cafeteria area for our summer camp program. Grant Walker 4-H Educational Center serves as a 4-H summer camp for youth, grades 4th – 6th in a camp setting.
Qualifications:
- Minimum 21 years of age.
- Current ServSafe certification preferred.
- Must complete the employee background screening process and be approved by the LSU AgCenter Human Resources Unit.
- Experience in an institutional or large food service setting.
- Knowledge and experience in food service: ordering, inventory, budgeting, food preparation, line serving, cleaning, and institutional/commercial kitchen equipment.
- Knowledge of federal, state, and local laws concerning food service operations.
- Willingness to follow guidance and instruction from the Camp Director and LSU AgCenter Food and Nutrition Agents.
- Ability to work as a team member.
- Strong organizational skills.
- Ability to ask for assistance when needed or desired.
- Capability to relate to youth and young adults in a positive manner.
Responsibilities:
- Assist in the coordinating and conducting of staff training for all kitchen staff.
- Develop kitchen assignments for kitchen staff based on their area(s) of experience.
- Maintain a safe and sanitary environment for food handling, storage, and serving.
- Conduct weekly inspections of all kitchen equipment and facilities to ensure proper utilization, care, and maintenance.
- Report equipment/facility/food issues promptly to Camp Director.
- Plan appropriate quantities of nutritious and healthy meals.
- Work within the budget provided to create food orders and any needed menu adjustments.
- Confirm, accept, unload, and inventory food, supplies, and equipment deliveries.
- Communicate correct procedures and practices to kitchen staff.
- Follow the LSU AgCenter Grant Walker 4-H Educational Center policies and procedures.
- Adhere to mealtime schedules, clean-up, and prep time.
- Be a positive role model to campers and staff in your attitude and behavior.
Job Duties:
- Create daily meal plans for between 300-350 campers and staff.
- Clean, organize and reset the kitchen, service, and dining area following each meal.
- Supervise up to 12 kitchen staff.
- Ensure high-quality meal experiences for all attendees at camp.
- Other duties as assigned by the Camp Director.
Physical Aspect of the Job:
- Excellent communication skills.
- Work with large groups (of varying age, ability, and experience levels) to provide necessary instruction and information.
- Effective visual and auditory skills. Be able to identify and respond to environmental and other hazards.
- Follow safety policies and procedures.
- Be prepared to use all kitchen equipment correctly and in a safe manner.
- Duties include:
- Prolonged standing, bending, stooping, and walking.
- Hand-eye coordination and manual dexterity to manipulate equipment
- Some heavy lifting
- Extended exposure to heat
- Irregular work hours on occasion

- Camp Director
- Sous Chef/Kitchen Assistant
- Line Cooks/Kitchen Staff
Supervises:
Hours and Salary: Morning and evening shifts are available. Salary will commensurate with experience. Workdays are Monday – Thursday each week for ten weeks.
Dates Available: Camp begins on May 22, 2023, and ends on July 28, 2023.LOST Camp is August 3-6, 2023. The camp is not in session the week of June 19-23, 2023. The Chef/Kitchen Director will work before the camping season begins for ordering, kitchen set-up, hiring of kitchen staff, and menu review and planning. Those dates will be announced upon hire.
