LSU AgCenter food demonstration series to unlock the secrets of food sciences with fiesta session

(03/18/25) BATON ROUGE, La. — The LSU AgCenter Food Innovation Institute (FOODii) and the School of Nutrition and Food Sciences are planning to continue the food demonstration series, Unlocking the Secrets of Food Sciences, that will delve into food science with a culinary twist.

The second session of the series will focus on chips and salsa and will be held Friday, April 25, from 5 to 8:30 p.m. in the test kitchen at the Animal and Food Sciences Laboratory Building on the LSU campus at 39 Forestry Ln.

Participants will have an opportunity to learn how to make a homemade version of tortilla chips and salsa and learn about the functionality of the ingredients and preparation methods.

“We will talk about different ways to make salsa and the role of ingredients and processing steps when making corn and flour tortillas,” said Evelyn Watts, LSU AgCenter and Louisiana Sea Grant seafood extension specialist.

Watts will be working with LSU AgCenter consumer food safety specialist Shannon Coleman, and Ashley Gutierrez, assistant director of FOODii. Each will bring their unique food science experiences to the session.

The salsa event will include:

  • Expert insight: Learn the science behind how acidity in salsa, primarily from tomatoes, vinegar and lime juice is crucial for both flavor and preservation. Also, how the method of cooking the salsa ingredients affects the flavor profile. For tortilla making, we will discuss the type of flours used when making corn and wheat tortillas.
  • Hands-on experience: Participate in hands-on activities that allow you to create several varieties of salsa and learn how to make your own chips.
  • Innovative techniques: Discover cutting-edge techniques that can be done in your home kitchen.

Space is limited and registration is required. The cost to attend is $50, and each participant will leave with their own batch of chips and salsa.

Watts said they plan to offer the series every other month. Future topics include charcuterie boards, ice cream cake and toaster pastries.
