Santa Claus is coming to town. Be prepared by creating a Santa Plate that is full of vegetables. Use this recipe for your Holiday entertaining or to compliment a Family gathering. This recipe is simple to construct and delicious to eat and enjoy. Happy Holidays!

Vegetable Santa


1 medium cauliflower, separated into flowerets

2 medium carrots, pared and cut into ¼-inch slices

3 tablespoons water

1 cup cherry tomatoes, halved lengthwise

1 ripe olive, halved crosswise

1 (10-ounce) package frozen French-style green beans, thawed

¼ cup commercial salad dressing

3 tablespoons butter or margarine, melted

Combine cauliflower, carrots, and water in a 2-quart casserole. Cover and microwave at HIGH for 3 to 4 minutes or until crisp-tender, stirring after 2 minutes. Let stand, covered, 3 minutes. Rinse under cold running water. Drain well.

Arrange carrots for face of Santa in a 5 x 3-inch rectangle in center of a large round microwave-safe platter. Reserve 1 large caulifloweret; arrange remaining cauliflowerets, stem side down, on plate to form beard and hair, starting from long edges of rectangle. Arrange cherry tomatoes, cut sides down, in a cone shape to form hat; place reserved cauliflower at tip of hat. Place ripe olive halves on carrots for eyes, and arrange beans at top of beard for whiskers.

Combine dressing and butter; mix well and pour evenly over vegetables. Cover with heavy-duty plastic wrap, and microwave at HIGH for 2 minutes or until thoroughly heated, rotating platter a half turn after 1 minute. Let stand, covered 2 minutes. Yield: 8 to 10 servings.
