Basil-based sauce that originated in Genoa, Italy. It also contains garlic, olive oil, and a hard cheese, such as Parmesan & traditionally pine nuts. We used walnuts in ours, but a really great substitute would be Louisiana pecans!
1. Toast unpeeled garlic cloves & walnuts in small skillet. Remove and peel garlic.
2. Put in food processor.
3. Add basil, cheese, and olive oil.
4. Blend until smooth - season with salt & pepper. Add white pepper and/or red pepper flakes, if desired. Transfer to bowl and stir.
6 cloves garlic
1/2 cup walnuts
4 cups fresh basil, packed
1/2 cup Parmesan cheese (grated or shredded)
1 cup extra virgin olive oil
Salt & Pepper, to taste
Ground white pepper and/or red pepper flakes, if desired.
