Recipe for Watermelon Salsa featured on KARD TV-14's Louisiana Living segment, Farm to Table, July 24, 2018. Demonstrated by Markaye Russell, Area Nutrition Agent, LSU AgCenter.
1/4 c. pepper jelly
1/4 c. lime juice
2 c. watermelon, seeded and diced
1 can peaches, rinsed, drained and chopped
1/3 c. basil, fresh and chopped
1/4 c. chives, chopped
3 c. tomatoes, diced
Whisk together pepper jelly and lime juice in a small bowl. Heat in the microwave for 10-15 seconds or until softened. Stir in watermelon, peaches, basil, and chives. Mix in tomatoes and serve.
Makes 10 1/2-cup servings.
